Description
The lemon is the fruit of a tree in the Rutaceae family; it is yellow in colour and spherical or oval in shape, with a thick rough or smooth skin and juicy, sour and almost colourless flesh. The tree can reach 6 metres in height and has spiny branches and white or purple flowers.
Lemon needs a mild climate and, in ideal conditions, can fruit twice a year.
50% of the weight of a lemon is juice (citric acid), which is used in a variety of ways in both industry and cooking.
Lemon juice is extremely high in vitamin C.
